Cabbage Salad with Tofu
I usually keep a block of tofu handy in my fridge, as my tofu recipe collection has been growing steadily! This was a relatively quick weeknight meal that was pretty filling and still light. I made this recipe as is; the only thing I might change in the future is to reduce the soy sauce, up the lime juice and maybe add a touch more sugar. Even without those modifications, my husband and I still devoured it pretty quickly. Leftovers? Not a chance.
